Whether your needs are in the dining/drinking area of your operation otherwise known as the front of the house (FOH), or in the kitchen/employee/prep area in the back of the house (BOH), we assist the client in designing an effective and productive operational plan to include all areas, positions, and duties. Full conceptual development projects are intended to assist the client with professional guidance, training, planning, and execution of all development and operational issues concerning their new bar and/or restaurant. Once retained, the assigned consultant to the project remains at the client’s disposal for the duration of the projects proposed timeline. The Beverage Alcohol Sellers and Servers Education and Training (BASSET) program is regulated by the Illinois Liquor Control Commission and is a mandatory requirement in dozens of counties and individual municipalities in the state of Illinois. Constructed as an alcohol awareness program, BASSET is customized for the alcohol sellers and servers in the State of Illinois. This online program is designed to be completed in only three to four hours and a certification is instantly issued following its successful completion. Constructed as an alcohol awareness program, BASSET is customized for the alcohol sellers and servers in the State of Illinois. Mandated as a six hour program, the BASSET class is broken into five areas of coverage:Physical Properties of Alcohol: Identifies the components of alcohol and its effects of the human body, early warning signs of intoxication, fetal alcohol syndrome, alcohol overdosing, and Blood Alcohol Concentration. Prevention and Intervention: Discusses techniques in dealing with intoxicated customers, avoiding over serving customers, identifying alcohol server and seller responsibilities, and tips for enforcing responsible sales and service of alcohol. Identification Techniques: This portion of the training is handled by the Illinois Secretary of State Police Department (Operation Straight ID) and focuses exclusively on fictitious and fraudulent ID's, empowering the seller or server in the techniques of spotting such documents. It also covers all laws surrounding the sales and service of alcohol to patrons under the age of 21 and the penalties for such actions. State Statutes, Local Ordinances, DUI Laws: This segment covers both federal and state laws surrounding alcohol sales and services including criminal and civil liability. It also details county and municipal laws regarding closing times, liquor license provisions, and penalties, fines and procedures for violations. Dram Shop and Liability Insurance: Details the differences and procedures in litigation for both criminal and civil courts. It also discusses the Dram Shop/Liquor Control Act and modifications made to it over the past sixty years. Dram Shop Insurance, Vicarious Liability and Third Party Liability are also covered. Our Online Bar Management Certification Program is designed for current or new bar owners, bar managers, or those who are interested in advancing their food and beverage career. Based on our very popular three week Bar Management Program, it is designed to provide students with Industry tools, skills, and knowledge that can immediately be applied to their current or future bar business. The Bar Ownership program is designed for new or prospective bar owners with little to no experience in the bar & restaurant industry. The course takes the student through the process of conceiving, designing, and opening a new bar. It also covers the process of purchasing an existing operation. You will have 14 days from the time of your registration to complete the program at your leisure. This course will take you through the three primary phases of bar ownership: (Phase 1) Pre-Contemplation:1. Type of Business- Registering your business as a sole proprietorship, corporation, or partnership will make a big difference in your operation's taxes, liabilities, and money management. Here you will learn which is best for you and why.2. Type of Bar- Whether you're looking at opening a neighborhood bar, nightclub, lounge, or restaurant/bar combination, each type of bar comes with its own set of risks and rewards. These differences are discussed at length in this section as are the start-up details for each type of operation.3.Location Data- Where should you open or purchase a bar? Charlie's Professional Bartending has been training instructors and students in BASSET since 1994. We have trained Instructors for major corporate chains like Wal Mart, Aldi, Kroger Foods, Buffalo Wild Wings, Outback Steakhouse, Walgreens, Target and Chicago Entertainment Cruises, as well as major municipalities such as the City Of Chicago, Villa Park, Crystal Lake, Downers Grove, Waukegan, and Rockford.Approved by the Illinois Liquor Control Commission, this course is a mandatory requirement for anyone wishing to become a BASSET instructor in the state of Illinois . It is designed for owners, Managers, and senior employees of alcohol sales establishments as well as police agencies, municipal workers, liquor industry professionals, and independent consultants wishing to become BASSET instructors. This course will teach students the art of public speaking, setting course objectives, syllabus creation, program design and timelines, group dynamics, and material research. It will also thoroughly cover the five areas of BASSET and the proper way to present your material. Upon completion of the program, trainers will be qualified for (and assisted in) applying to the Illinois Liquor Control commission for a BASSET instructor license. This course is ideal for businesses, municipalities, and institutions where “in house” training would be both advantageous financially and logistically.In addition to the trainer series certificate, students successfully completing the program will need to also provide the ILCC with a completed BASSET program, pre & post tests, class syllabus, and timeline before an instructor license can be issued. Charlie's Professional Bartending has pre-completed programs available that can be customized for any corporation or municipality and have already been pre-approved by the Illinois Liquor Control Commission for implementation. Pre-construction of this program prior to the trainer series will ensure that students taking the trainer program are trained on their own BASSET course and much more prepard for the first class. The program is provided in PowerPoint format and tests and syllabuses are in Microsoft Word. The program is the sole property of the client's once purchased and is royalty free. However, the program can NOT be distributed or sold to any other party without the written consent of Charlie's Professional Bartending. This package allows a client taking the trainer series and purchasing the pre-approved program to hold their first BASSET class within three weeks of submitting their application to the ILCC. BASSET Trainer classes are conducted at the student(s) place of employment or municipal location. They can be customized to fit the student(s) schedule and can be scheduled during both week days and weekends. The class can be conducted and completed in one 9 hour day. BARTENDING SCHOOL

BARTENDING CERTIFICATION

This intensive four session (25 Hour) course will focus on teaching you the basic mechanics behind the bar, effective customer service, and dealing with industry pressures. You will be drilled on proper glassware identification, pouring techniques, bar tools and bar equipment. The drink recipes you will learn and pour consist of the forty most common drink recipes that will constitute ninety percent of the drinks you will ever make! Our expert instructors will teach you proper ways of: measuring, pouring, mixing multiple liquors, blending, garnishing, and industry tricks of the trade! We also provide an intensive overview of liquor and liqueur categories as well as wines, beers, cordials, cognacs, and specialty brands. Students will be exposed to the pressures of customer service, even under extreme conditions, as well as various bar atmospheres. Time consolidation methods and order of drinks are also part of the curriculum. Upon completion of this course students will be ready for immediate job placement as a bartender. Following the completion of your Basic Bartending training, you will take the Illinois Beverage Alcohol Sellers and Servers Education and Training (B.A.S.S.E.T.) Program. This is a separate certification, but is included in your tuition price. Class sizes are limited to ten students. A Feasibility Study is comparable to a Market Analysis in that it takes into consideration all of the factors involved in starting a new business or buying an existing one. The biggest difference between the two is that the feasibility study focuses more on the likelihood of success or failure with a particular operation, in a particular area, rather than just showing how it will market its product and compete with other businesses. In a Feasibility Study, particular attention is paid to the selected location for a business, the retail and commercial market in that area, current and past successes or failures of similar businesses in that market, estimated start up costs and operational expenses, past business performance, regional population, median income, municipal codes, restrictions, taxes, and planning.Following our completion of a feasibility study, you will have a clear idea of the likelihood or unlikelihood of success at the location you’'ve chosen, or in the general area you seek. This information can also be easily consolidated and utilized into the primary business plan. COST: $2500.00 PLUS EXPENSES
Operations Analysis projects are intended to assist the business owner of existing operations with professional guidance, training, planning, and execution of all operational issues concerning their hotel, bar, or restaurant. Once retained, the assigned consultant to the project remains at the owner/manager(s) disposal for the duration of the project'’s proposed timeline. The consultant is responsible for assisting the owner/manager in all designated operational functions such as labor costs, inventory controls, cost analysis, marketing objectives, theft identification and prevention, service and management training, and objectives planning. COST: $2000.00 PLUS EXPENSES
If you’re looking at purchasing an existing bar, you will likely need a Business Analysis to be conducted prior to the purchase. The Business Analysis will dissect the financial statements of an existing business and compare the reported annual gross sales figures against the actual verified annual gross sales figures. A Business Analysis is what we define as level one consulting. It covers an initial overview of the proposed operation that the client seeks to purchase, with any pre-acquisition requests, concluded in a finalized report with recommendations. Level One (Preliminary Business Analysis): CPB Consulting conducts a preliminary business analysis on the client’s proposed business purchase. Level one services include collection and verification of corporate or business structure, verification of ownership(s), and all business financial data. Data gathered includes annual and monthly gross sales, distributor purchase orders, annual state and federal liquor, gaming, & food taxes, all operational expenses, mortgages or leasehold agreements, outstanding loans and/or liens, accounts payables, static expenses, state and local permits and fees, P&L statement, FF&E depreciation, existing inventory, and recent property tax assessment. A background investigation on the current liquor and gaming licenses and their histories will also be conducted, as will labor and workers compensation claims. CPB Consulting will investigate the business location’ history as well as any formal local and state liquor/gaming violations that are on record. Ownership structure and any current vested interests in the proposed turn-key operation will need to be disclosed for an accurate translation of a possible purchase.COST: $2500.00 PLUS EXPENSES
